Who makes it
Bota Vieja is a bodega from 1924 in the upper town of Sanlúcar. It makes wine and it makes vinegar, and the vinegar was always the poor relation. Macarena Rendón started there as an intern in 2011 and today she is the cellar master.

When the old cellar master, Paco, retired, nobody wanted the vinegar casks. They took up room and gave little back. Macarena asked if she could keep them. They said yes because nobody else wanted them.

Now the vinegar sells more abroad than the wine does. Macarena is thirty-eight and says that in Jerez you have to wait a long time for everything. This vinegar has waited two years in the cask before reaching your salad.
How it is made

01
Wine from palomino grapes turns to vinegar on its own in old American oak casks.

02
It moves through the criaderas and the solera: vinegar is drawn from the bottom cask and topped up from the one above.

03
Each draw is small, so the vinegar blends with that of earlier years.

04
After at least two years in cask it is bottled without heavy filtering.

Andalusia
Sanlúcar de Barrameda is where the Guadalquivir meets the sea, across the water from Doñana. The bodegas have high ceilings to let in the Atlantic air.

What we are allowed to say
Reserva sherry vinegar spends at least two years in cask. That is why it smells of wood and nuts and is less sharp than a young vinegar.
What they do so it lasts
- 01The casks are more than fifty years old and are repaired rather than replaced.
- 02The bodega is cooled by the west wind, with no air conditioning.
- 03Glass bottle with a cork stopper.
