Who ran it
Fermín planted the first truffle oaks in 1997, on cereal land that had stopped paying. The first truffle came eleven years later. He is seventy-one now and his back will not let him bend down.

What we have changed
Since 2025 Rubén Gil has run it with his dog Kira. We are moving the watering to drip lines with probes, because truffles want water right in August. The pond fills with the rain that runs off the store roof.

What it gives now
Last season gave 310 kilos of black truffle. The big ones are sold fresh at the Sarrión market. The small ones are sterilised in jars at a workshop in Mora de Rubielos. Fermín comes down to watch them weighed.
