La Carrasca de SarriónSince 1997

Who makes it

Fermín planted the first truffle oaks at La Carrasca in 1997, on cereal land that no longer paid its way. They took eleven years to give the first truffle. He is seventy-one now and his back will not let him bend down.

Rubén Gil is twenty-seven. As a boy he went out truffle hunting in the hills with his grandfather. He studied in Valencia and came back to Sarrión with a dog, Kira, who can find a truffle twenty metres away. Since 2025 he has run the farm for @seis.

Buyers weigh black truffles at the Sarrión market as Rubén Gil looks on

Around 80% of the world's black truffles come from the province of Teruel, and Sarrión supplies 80% of those. Almost all of them go to France by lorry and come back under another name. Rubén wants this one to reach your table saying where it is from.

How it is made

  1. Fermín and Rubén Gil plant a young inoculated holm oak in Sarrión

    01

Holm oaks are planted with inoculated roots and take about ten years to give truffles.

  2. Rubén Gil digs out a truffle with a short blade where Kira has marked

    02

From December to March, Kira marks the truffle and Rubén digs it out with a short machete.

  3. Hands dry brushing black truffles and sorting them by size

    03

The truffles are brushed dry and sorted by size the same afternoon.

  4. Rubén Gil puts whole truffles into small jars before sterilising them

    04

They are sterilised whole in the jar, in their own juice with a pinch of salt.

Rows of frosty truffle oaks in Sarrión with snowy Javalambre behind

Matarraña and Teruel

Sarrión sits between Gúdar and Javalambre, at almost a thousand metres, with frosty winters and dry summers. The truffle oaks stand in long rows where wheat used to grow.

What we are allowed to say

The smell of black truffle comes from volatile sulphur compounds such as dimethyl sulphide. That is why it comes through more with heat and fat: eggs, potatoes or a rice dish.

What they do so it lasts

  1. 01The oaks were planted on cereal fields that had been abandoned.
  2. 02No weedkiller goes between the rows: the strimmer goes through twice a year.
  3. 03The irrigation pond fills with the rain that runs off the storehouse roof.
