Who makes it

Carmen Nogués has spent thirty-six years bagging peaches in her father's orchard by the Guadalope. Every July she slips a paper bag over each fruit by hand. That comes to about forty thousand.

Álex Nogués sorts the peaches that are too small for the table

Her son Álex is twenty-four and has a degree in food technology from Teruel. Preserving the peaches that are too small to sell as table fruit was his idea. Before, they went for juice at next to nothing.

The designation covers the fresh fruit, not the preserve. So the jar carries no seal, even though every peach met its rules on the tree. Álex says he would rather explain that than wear a medal that is not his.

How it is made

  1. Carmen Nogués puts a paper bag over each peach on the tree in July

    01

In July every peach is wrapped in a paper bag on the tree.

  2. A worker opens the paper bag and picks a yellow peach in October

    02

They are picked by hand in September and October, after three months inside the bag.

  3. Carmen Nogués and two neighbours peel and stone peaches by hand

    03

They are peeled and stoned by hand in the orchard's own workshop.

  4. Álex Nogués covers the peaches with syrup and pasteurises the jars

    04

They are covered in light syrup and pasteurised in the same jar.

Matarraña and Teruel

Calanda lies in the Guadalope valley in Bajo Aragón, surrounded by orchards and vegetable plots. The late peach is picked when there are none left anywhere else in Spain.

What we are allowed to say

The bag shields the peach from direct sun and insects in its last months. That is why it ripens slowly, with thin yellow skin.

What they do so it lasts

  1. 01The paper bags end up on the orchard's own compost heap.
  2. 02The orchard is drip-fed with water from the irrigation channel.
  3. 03Peaches too small for the table go into the jar.
