Who makes it

Joaquín and Rosario planted the first almond trees at Els Tossals in 1984. Rosario died in 2021 and the farm was up for sale for two years without a single call. We bought it in 2025.

Elena walks her elder child to the village school in La Codoñera

Elena and Sergio are in their early thirties with two small children. They lived in a seventy-square-metre flat in Zaragoza. They saw the advert for someone to run the farm and within a month they were in La Codoñera. The elder one already goes to the village school, which has stayed open this year.

Joaquín explains the blossom to Sergio, who writes in a notebook

Joaquín comes up every February to see the blossom. Sergio asks him about everything and writes it down in a notebook. He says that the day he no longer needs to ask, the farm will be a little bit his.

How it is made

  1. A shaker vibrates an almond tree and the almonds fall onto tarps

    01

In September the trees are shaken onto tarpaulins and the almonds dry in the sun for a few days.

  2. Two workers pick out broken or stained almonds by hand in Alcañiz

    02

They are shelled in Alcañiz and any broken or marked ones are picked out by hand.

  3. Marcona almonds toasting with a thread of olive oil and salt

    03

They are roasted in the oven with a drizzle of oil and a little salt.

  4. Hands filling paper bags with toasted almonds on a scale

    04

They are packed in a paper bag with an inner lining so they stay crisp.

Matarraña and Teruel

La Codoñera is a small village in Bajo Aragón, between Alcañiz and the Matarraña. The almond trees climb stone terraces that the grandparents built.

What we are allowed to say

Almonds are high in vitamin E. Vitamin E contributes to the protection of cells from oxidative stress.

What they do so it lasts

  1. 01Only the lower terraces are watered, where the soil holds on to moisture.
  2. 02Sensors switch on the frost protection only when it is needed.
  3. 03The shells are sold to biomass boilers in the area.
