Who makes it

Nerea Bel left Calaceite at eighteen to study agricultural engineering in Lleida. She came back in 2023, the year we bought El Plano de Santa Bárbara, and she has run the farm ever since. She is twenty-nine and by far the youngest member of the co-op.

Ramón points to where the frost settles first while Nerea Bel shows him the irrigation meter

The 17 hectares belonged to Ramón, who worked them for forty-two years. He showed her where the frost lands first and which trees give the most. She showed him the water meter on every block. Ramón still drops by every other day and takes his oil home.

Nerea Bel unloads crates of freshly picked olives at the Calaceite olive mill at dusk

Nerea says she stays because here you can see what you do. Water well and the olives show it. Get them to the mill the same day and the oil shows it. Every bottle sold abroad pays for a little of her never having to leave again.

How it is made

  1. A trunk shaker vibrates an olive tree as an umbrella net catches the olives in Calaceite

    01

The olives are picked in November with a shaker and an umbrella, so they never touch the ground.

  2. Olives being washed in cold water at the olive mill in Calaceite

    02

They reach the mill in Calaceite the same day and are washed in cold water.

  3. Olive paste turning in a malaxer with the thermometer below 27 degrees

    03

They are crushed and slowly mixed below 27°C so the oil keeps its aroma.

  4. Nerea Bel bottles olive oil from a steel tank at the mill

    04

The oil rests in steel tanks and is bottled in batches, with the season on the label.

Matarraña and Teruel

Calaceite is a stone village on top of a ridge, right up against Catalonia. All around it there are empeltre olives, almond trees and low scrub as far as the eye can see.

What we are allowed to say

Olive oil is high in monounsaturated fat. Replacing saturated fats with unsaturated fats in the diet contributes to the maintenance of normal blood cholesterol levels.

What they do so it lasts

  1. 01The drip lines have moisture probes and the trees get water when the soil asks for it.
  2. 02The old open pond is now a covered cistern, so no water is lost to the sun.
  3. 03In winter the mill is heated by burning the stones of its own olives.
