Who makes it
Marta Pallarés teaches at the school in Valderrobres and Lluís Ferràs is an electrician. In 2016 they inherited her grandmother's plot: three hectares with 35 olive trees more than a thousand years old. Some of them were already standing when the village castle went up.

In the first few years they nearly sold it. Each tree gives very little and no machine fits between those trunks. One winter they picked the olives by hand with the cousins and had them milled on their own. They got a thousand bottles and every one was gone by the sixth of January.

Now they do it every December at weekends, with anyone who wants to come up and help. Marta says that if nobody picks them, these trees end up as an entry in a catalogue and nothing more. Every numbered bottle is a tree that is still giving.
How it is made

01
In December each tree is stripped by hand, branch by branch, onto sheets laid on the ground.

02
The olives go down that same day to a small mill that presses short batches.

03
The paste is mixed cold and the oil is left to settle, unhurried, in steel tanks.

04
Each bottle is filled by hand and carries its own number and the number of its tree.

Matarraña and Teruel
Valderrobres sits in the heart of the Matarraña, with its stone bridge over the river. It belongs to the Taula del Sénia, the area with more thousand-year-old olive trees than anywhere else in the world.

What we are allowed to say
Olive oil is high in monounsaturated fat. Replacing saturated fats with unsaturated fats in the diet contributes to the maintenance of normal blood cholesterol levels.
What they do so it lasts
- 01No tractor gets into the plot: everything is done by hand.
- 02A neighbour's sheep graze the grass in winter and keep it short.
- 03The bottles travel in recycled cardboard boxes, with no plastic packing.
