Who makes it

Iván Garcés is thirty-four and has a small shed in Alcañiz that his parents set up in 1979. Pili and Toño cured black olives for half of Bajo Aragón. Iván went off to work in a car factory in Zaragoza and had no plans to come back.

In 2022 Toño retired and the shed was going to close. Iván spent a whole weekend doing the sums. On the Monday he rang the factory and told them he was leaving. His mother still comes in every morning to taste the brine.

Iván Garcés picks ripe black olives by hand near Alcañiz in January

He says the tinned black olives in the supermarket are green ones painted black, and that it gets under his skin. His ripen on the tree until January. When someone in Hamburg opens a jar, Iván knows no machine picked those olives.

How it is made

  1. Ripe black empeltre olives on the branch in January

    01

The empeltre olives are left on the tree until they ripen black, in January.

  2. Iván Garcés checks a vat of black olives curing in brine

    02

They cure in brine for four to six months, with no caustic soda.

  3. Drained olives dressed with a stream of local olive oil

    03

They are rinsed, drained and dressed with a splash of olive oil from the area.

  4. Iván Garcés fills glass jars and pasteurises them in the warehouse

    04

They are packed in glass jars and pasteurised so they keep without a fridge.

Alcañiz with its castle above the Guadalope and olive groves up to the last houses

Matarraña and Teruel

Alcañiz is the capital of Bajo Aragón, with a castle above it and the river Guadalope below. The empeltre groves run right up to the last houses.

What we are allowed to say

A real black olive ripens on the tree and the colour is its own. Many tinned black olives are green ones darkened with air and iron salts. These have none of that.

What they do so it lasts

  1. 01The brine is filtered and used again for the next batch.
  2. 02He buys his olives from twelve growers in Bajo Aragón, all less than 30 kilometres away.
  3. 03The jar is glass and the lid is metal with no bisphenol lining.
