Who ran it

Vicente and Teresa milked four hundred ewes and made Tronchón cheese in the farmhouse kitchen, with his grandmother's wooden mould. They sold it at the Cantavieja fair and to anyone who came up for it. Their two sons work in Castellón and neither wanted the flock. Vicente sold half the ewes and the dairy stood still.

What we have changed

We bought the farmhouse and its 62 hectares of pasture in 2025. We set up a small licensed dairy in the old lambing shed, with machine milking and a curing room that controls the humidity. The flock is back to 480 Rasa aragonesa ewes and each one wears an electronic tag.

What it gives now

The cheese is still made with raw milk and in a mould, with the flower pressed into the top. There are 11,800 cheeses a year and they cure for between six weeks and four months. Teresa comes down on Thursdays to taste the curd.
