Who makes it

Manolo Ruiz is fifty-four and has spent thirty years at the almadraba. Every May he heads out of Barbate in the boats that set the nets off the coast. His father worked the almadraba too, and so did his grandfather.

Lidia Galván oversees the packing line in the Barbate cannery

Conservera Galván has been at the harbour since 1957. Lidia Galván is twenty-nine and runs the packing line. Her uncles are over seventy and none of her cousins wants to carry on. That is why we are looking at it joining @seis.

Lidia Galván stacks tins as her uncles chat at the cannery door

Lidia says almadraba tuna is the tuna that passes by here once a year and does not come back. If the cannery closes, it will be tinned somewhere else under another name. She wants the tin to go on saying Barbate.

How it is made

  1. Fishermen set the fixed almadraba nets off the coast of Barbate

    01

In spring the almadraba is set: a maze of fixed nets across the tuna's path into the Mediterranean.

  2. Fishermen haul the net by hand during the levantá off Barbate

    02

When the nets are raised, only the big tuna are hauled up by hand, and they are landed within the hour.

  3. Workers clean the cooked tuna loins by hand in the cannery

    03

The tuna is cooked in salted water and cleaned by hand, loin by loin.

  4. Hands place the tuna in tins and cover it with olive oil

    04

It is packed into tins with olive oil and rests for months before it is sold.

Andalusia

Barbate is on the Cádiz coast, between the La Breña pine forest and the Strait of Gibraltar. The town has lived off tuna since the Phoenicians.

What we are allowed to say

Bluefin tuna is high in omega-3 fatty acids. EPA and DHA contribute to the normal function of the heart. The beneficial effect is obtained with a daily intake of 250 mg of EPA and DHA.

What they do so it lasts

  1. 01The almadraba is a fixed trap: it does not chase the tuna, it waits for it.
  2. 02It only keeps the big, adult tuna.
  3. 03It is fished under quota and every fish comes with its catch certificate.
