Who makes it

Encarna Rivas started making olive oil tortas in her kitchen at home in Carmona in 1990. She sold them to the town's bars wrapped in brown paper. Today she is sixty-six and has a workshop with four women in it.

Inma Rivas and the women of the bakery stretch tortas by hand in Carmona

Her daughter Inma spent twelve years in a call centre in Seville. In 2020 the office closed and she came to work with her mother in the workshop. At first it was only meant to be for a few months.

Inma Rivas's hands stretch a torta until it is very thin

Every torta is stretched out by hand, one at a time. Inma says a machine would make them all the same, and that is exactly what she does not want. As long as people keep asking for them, there will be five of them in the workshop.

How it is made

  1. Hands knead flour with olive oil, aniseed and sesame

    01

Flour is kneaded with extra virgin olive oil, aniseed and sesame seeds.

  2. Encarna Rivas stretches each ball of dough by hand on the table

    02

Each ball of dough is stretched out by hand on the table until it is very thin.

  3. A baker sprinkles sugar on the tortas and puts them in the oven

    03

Sugar is sprinkled on top and they bake until the edges turn golden.

  4. Hands wrap each torta in waxed paper one by one

    04

They are wrapped one by one in waxed paper.

The Seville countryside seen from the walls of Carmona with wheat and olives

Andalusia

Carmona sits on a ridge above the Seville countryside, with Roman walls and white streets. From the top you can see mile after mile of wheat and olive groves.

What we are allowed to say

They are made with extra virgin olive oil, with no lard or margarine. The aniseed and sesame come from the same old recipe.

What they do so it lasts

  1. 01Each one wrapped in waxed paper, with no plastic bag inside.
  2. 02The oven runs on the solar panels on the workshop roof.
