Who makes it

Lorenzo Carrasco is fifty-eight and has six hundred Manchega sheep in Herencia. He takes them out to the cereal stubble every morning, as his father did. He set up the dairy himself in 1985.

Gema Carrasco works the curd as her father looks in from the door

His daughter Gema is twenty-nine and makes the cheese. She studied in Madrid and came back meaning to make it only from their own sheep's milk. Lorenzo says that at first he did not believe her.

Gema says co-op Manchego is good and hers is something else. Every cheese is made with milk from a single flock. If she stops, Lorenzo sells the sheep and Herencia has one flock fewer.

How it is made

  1. Lorenzo Carrasco milks the manchega sheep at dawn

    01

The Manchega ewes are milked twice a day and the raw milk goes straight into the vat.

  2. Gema Carrasco's hands press the curd into a mould with a woven pattern

    02

The milk is curdled, the curd is cut and pressed in a mould with a basket-weave pattern.

  3. Fresh manchego cheeses in brine with the mould flower on top

    03

It is salted in brine and the top carries the flower pattern from the mould.

  4. Gema Carrasco turns the cheeses in the cellar

    04

It ages for six months in the cellar and is turned every week.
