Who makes it

On the edge of the Los Rastrojos dairy there are twenty quince trees that Lorenzo's mother planted. Nobody sprays them or waters them. Every October they give more quinces than the kitchen can hold.

Gema Carrasco stirs quince paste in a kitchen full of baskets of fruit

Gema started making membrillo with them so they would not go to waste. First for the family. Then to go with the cheese in the village shop.

Manchego cheese with quince paste beside a vermouth with an olive

She says a Manchego without membrillo is like a vermouth without an olive. That is why we sell it from the same house.

How it is made

  1. Gema Carrasco picks quinces from the trees at the field edge in October

    01

The quinces are picked in October, when you can smell them from a distance.

  2. Hands press cooked quinces through a food mill

    02

They are cooked with their skins on and passed through a food mill.

  3. A spoon stirs the quince paste until it comes away from the pan

    03

The pulp is cooked with sugar, stirring, until it comes away from the pan.

  4. Hot quince paste poured into tubs to set

    04

It is poured into tubs and left to set for two days.

Herencia is in the heart of La Mancha, in Ciudad Real, at the foot of the Sierra de Puerto Lápice. The quince trees grow along the field edges, where nobody ploughs.

What we are allowed to say

Membrillo sets on its own, with the pectin from the fruit itself. It has no gelling agents or thickeners.

What they do so it lasts

  1. 01The quince trees are never sprayed or watered.
  2. 02All the fruit gets used, the ugly ones too.
  3. 03Cardboard tub with a compostable film.
