Who makes it

Pedro pulled up the vines at La Veguilla in 2008 and planted pistachio trees. The village called him mad. The first pistachios took seven years. He is seventy-six now and his grandchildren live in Madrid.

Rebeca and Ángel Moya walk past the closed wine cooperative

Rebeca and Ángel Moya are in their early forties and have run the farm for @seis since 2025. She is from Membrilla and he is from Valdepeñas. They both worked at a wine co-op that closed.

Rebeca Moya checks the irrigation at the foot of a pistachio tree in a dry summer

In Castilla-La Mancha 36% of pistachios are already organic, and these are too. Rebeca says pistachio copes with drought better than vines do, and in La Mancha that is what counts.

How it is made

  1. A shaker vibrates a pistachio tree and the nuts fall onto a sheet

    01

In September the trees are shaken and the pistachios fall onto a tarpaulin.

  2. Pistachios are hulled the same afternoon in a small machine

    02

They are hulled the same day so the shells do not stain.

  3. A grinder turns toasted pistachios into a smooth green cream

    03

They are dried, lightly roasted and slowly ground until they turn to cream.

  4. Hands fill glass jars with pistachio cream and nothing else

    04

It is packed with no added sugar or oil, just pistachio.

What we are allowed to say

It is only pistachio, with no added sugar or oil. It is a source of protein. Protein contributes to the maintenance of muscle mass.

What they do so it lasts

  1. 01Certified organic since 2015.
  2. 02The pistachio trees get little water, and only in the hottest part of summer.
  3. 03The shells are burnt as fuel for the dryer.

It is certified organic.
