Who makes it
Celestino Tovar is seventy-one and has a two-storey smokehouse in Pasarón de la Vera that his father built in 1955. Every autumn he lights the fire downstairs and the peppers smoke upstairs for two weeks. His children live in Madrid and Plasencia.

His niece Marisa is thirty-seven and teaches in Plasencia. For ten autumns she has been going over to help him through the season. She is the one who sits up at night to watch the fire.

Celestino says this will be his last autumn tending the fire. That is why we are looking at the smokehouse joining @seis, with Marisa in charge if she wants it. She has not said no yet.
How it is made

01
The peppers are planted in May and picked red, by hand, in October.

02
They are spread out on a wooden grid on the upper floor of the smokehouse.

03
Below, oak and holm oak burn for up to fifteen days. The smoke dries them slowly.

04
They are ground in a stone mill and tinned the same day.

Other regions
La Vera is a valley in the north of Cáceres, at the foot of the Gredos mountains, with cold mountain streams and oak woods. Paprika here is dried with smoke. In Murcia, they dry it in the sun.

What we are allowed to say
The red colour comes from the pepper's carotenoids, such as capsanthin. The smell comes from the oak smoke. Only the hot one has any heat, from capsaicin.
What they do so it lasts
- 01The wood comes from pruning the valley's own oaks and holm oaks.
- 02The peppers are watered from the Gredos streams.
- 03A tinplate tin that can be recycled whole.
