Who makes it

Pili Echarri is sixty and has a market garden in Sartaguda, by the Ebro, that she worked with her husband. He died in 2020. Pili thought about renting it out.

Ainhoa and Pili Echarri set up a roaster in the tool shed

Her daughter Ainhoa is thirty-three and was a lab technician in Pamplona. She asked her mother to give her a year. That year they set up a small roasting room in the tool shed.

Ainhoa Echarri carries peppers with two neighbours between gardens in the Ribera

Now they roast and peel by hand the piquillos from their own garden and from two neighbours' gardens. Ainhoa says the Ribera has more and more greenhouses and fewer and fewer market gardens. She wants hers to stay a market garden.

How it is made

  1. Pili Echarri and a neighbour pick the red piquillo peppers by hand in September

    01

The piquillos are planted in May and picked by hand when red, in September.

  2. Whole piquillo peppers roasting one by one over the flame

    02

They are roasted whole over a flame, one by one.

  3. Hands peel a roasted piquillo pepper without water

    03

They are peeled by hand, with no water and no chemicals.

  4. Hands place whole piquillo peppers in a jar with their juice

    04

They are packed whole in a jar, in their own juice.

Other regions

Sartaguda is in the Ribera de Navarra, on a bend of the Ebro with market gardens on both banks. Piquillos have always been roasted over a flame here.

What we are allowed to say

They are not peeled with water or caustic soda, they are peeled by hand. That is why they keep the taste of the fire and their flesh whole.

What they do so it lasts

  1. 01The skins go on the garden compost.
  2. 02The garden is watered from the Ebro irrigation channel.
  3. 03Glass jar, no tin.
