Who makes it

Xiana Otero is thirty-six and has two mussel rafts in the Ría de Arousa. Her father set them up in 1974. She is the first woman in her family to work the rafts and one of the few on the island.

Xiana Otero and her father go through papers sitting on the boat

As a child she got seasick on the boat. She studied business in Santiago and worked at a bank in Vigo. When her father said he was selling the rafts, Xiana asked for them to be put in her name.

She says you do not feed the mussels: the estuary does. If the estuary is healthy, the mussels are healthy. Every tin sold abroad is a raft that does not get sold to a fund.

How it is made

  1. Ropes heavy with mussels hang from a raft in the ria

    01

The mussels grow on the raft, hanging from ropes, for a year and a half.

  2. Xiana Otero and a crewman haul and clean the mussels on the boat

    02

They are brought up onto the boat, cleaned and steamed the same day.

  3. Hands place the fried mussels one by one in the tin

    03

They are fried briefly and laid in the tin one by one.

  4. Escabeche of oil, vinegar, paprika and bay poured over the mussels

    04

They are covered with an escabeche of oil, vinegar, paprika and bay leaf.

Other regions

A Illa de Arousa is an island joined to the mainland by a bridge, in the middle of the largest estuary in Galicia. From the quay you can see hundreds of mussel rafts.

What we are allowed to say

Mussels are high in vitamin B12. Vitamin B12 contributes to the normal function of the immune system.

What they do so it lasts

  1. 01Nothing is fed on the raft: the mussels filter the water of the estuary.
  2. 02The growing ropes are reused for several seasons.
  3. 03The tin is aluminium and can be recycled.
Xiana Otero coils the growing ropes to use them another season
