Who makes it

Javier Sáenz started La Sartén de Arnedo in 1998 in premises that used to be a shoe shop. Arnedo was a shoe town, and when the factories closed he took up frying potatoes. He is forty-four.

Álvaro Sáenz lifts crisps from the pan while his father watches

His son Álvaro is nineteen and this year he left university to stay. Javier is not happy about it. Álvaro says he learns more in the workshop than in class, and that nobody else is going to take on the pan.

Javier Sáenz fries a small batch of crisps in a wide pan

The crisps are fried in a pan, not a continuous fryer, so fewer come out each day. Javier says that if he made them the way the factories do, he would have closed already, because the factories already make them.

How it is made

  1. Potatoes with skin sliced very thin on a mandoline

    01

The potatoes are washed and sliced very thin, skin on.

  2. Javier Sáenz fries the potatoes in batches in olive oil

    02

They are fried in a pan with olive oil, at a low heat and in batches.

  3. Hands salt freshly fried crisps with sea salt

    03

They are drained and salted with sea salt while still hot.

  4. Hands fill large round tins with golden crisps

    04

They are packed in a tin so they do not break on the way.

What we are allowed to say

They are fried in olive oil, which stands up to the heat of the pan better than other oils. In a tin they do not break or lose their crunch.

What they do so it lasts

  1. 01The potatoes come from farmers less than 40 kilometres away.
  2. 02The used oil is collected to make biodiesel.
  3. 03A tin instead of a foil bag, which cannot be recycled.
