Celia Durán checks the ear of an Iberian sow as Agustín Lobato watches

Celia Durán is thirty-one and a vet from Fregenal. In 2024 Agustín offered her a job with him and she said yes before he had finished the sentence. Now she knows every sow by her ear.

Agustín is looking for someone to keep the dehesa going when he no longer can. That is why we are looking at it joining @seis, with Celia running it. This ham takes three years. Do not rush it.

How it is made

  1. Iberian pigs eat acorns under the holm oaks during the montanera

    01

From November to February the Ibérico pigs eat acorns and grass through the acorn season.

  2. A worker covers the Iberian hams with sea salt

    02

The legs are covered in sea salt, then washed and left to rest in the cold.

  3. Iberian hams sweat in the natural drying room with the windows open

    03

They move to the natural drying house, where the fat sweats in summer with the windows open.

  4. A carver slices an Iberian ham cured for three years by hand in the cellar

    04

They finish in the cellar until they reach three years and are sliced by hand.

What we are allowed to say

Cured ham is high in protein. Protein contributes to the maintenance of muscle mass.

What they do so it lasts

  1. 01In the acorn season each pig has more than a hectare of dehesa to itself.
  2. 02The holm oaks are pruned so they give acorns, and the wood ends up in the drying house.
  3. 03Rainwater ponds give the animals water all year round.
