Who makes it
Torrons de l'Era opened on the square in Agramunt in 1932. Clara Solé is the fourth generation. She is thirty and worked as an architect in Barcelona until her grandfather Ramon said that at eighty-four it was time to stop.

Nobody else in the family wanted the workshop. Clara spent an autumn learning, by hand, to tell when the honey is ready. Ramon shouted from his chair when to take the pan off the heat.

Torró is only made from October to December. The rest of the year Clara designs houses in the area. She says that without those three months, Agramunt would have one torró maker fewer and she would have one reason fewer to stay.
How it is made

01
The Marcona almonds are roasted whole in the oven.

02
Honey and sugar are cooked over a low heat and whisked egg white is folded in.

03
This is mixed with the hot almonds and spread between two wafers.

04
It is cut into round bars and left to cool in the workshop.

Catalonia
Agramunt is in the Urgell, on the plain of Lleida, with wheat fields to the horizon. It has made torró for centuries and has the geographical indication to prove it.

What we are allowed to say
The honey is the glue and the egg white gives it that crunch. It is almost all whole almonds, which is why every bite makes a noise.
What they do so it lasts
- 01The honey comes from hives in the Segarra, twenty kilometres away.
- 02The almonds are from Lleida and Bajo Aragón.
- 03Cardboard box, no plastic tray.
