Who makes it

Paula Ferrer is thirty-five and has twelve hectares of rice paddies in Sueca, by the lagoon. Her father, Toni, sowed them before her, and his father before him. Paula is a biologist and used to count birds in the nature park.

Toni Ferrer and his daughter Paula walk between the rice fields of Sueca

In 2019 Toni decided to give it up. Bomba yields half as much as other varieties and the sums did not add up. Paula thought that if nobody planted it, in a few years l'Albufera would only grow rice for packet paellas.

Paula Ferrer drives a tractor beside a flooded rice field full of birds in winter

Now she sows only bomba and sells it under her own name. She still counts birds, only now from the tractor. She says that in winter her flooded fields feed thousands of ducks. Whoever buys the rice pays for that too.

How it is made

  1. A farmer broadcasts rice seed by hand over a newly flooded field in May

    01

In May the field is flooded and the seed is scattered by hand.

  2. A combine harvests bomba rice in September with egrets following

    02

It grows in water all summer and is cut in September.

  3. A miller checks husked rice in a mill in Sueca

    03

It is dried slowly and hulled at a mill in Sueca.

  4. Hands filling and tying a cloth sack of bomba rice

    04

It is packed in a cotton cloth bag that you can use for bread afterwards.

Valencia region

Sueca is on the southern shore of l'Albufera, twenty minutes from Valencia. In summer everything is green and in winter the fields fill with water and birds.

What we are allowed to say

Bomba swells outwards and soaks up a lot of stock without splitting. That is why the grains stay separate and hold on to all the flavour.

What they do so it lasts

  1. 01The straw is ploughed back into the field, not burnt.
  2. 02In winter the fields are flooded and become a feeding ground for the lagoon's birds.
  3. 03Cotton cloth bag, no plastic.
