Who makes it

Enric Garrigós is forty-five and spent fifteen years in Madrid selling insurance. Every December he went back to Xixona to help out in his father's workshop. Torrons de la Sarga is small: three people in autumn, one in summer.

Enric Garrigós's daughter smells almonds as her father and grandfather watch

When his father fell off a ladder in 2020, Enric asked for six months' unpaid leave. He never went back to the office. His youngest daughter goes to the village school and can already tell a good almond by its smell.

Enric Garrigós weighs the last sacks of almonds of the season

He says the big factories in Xixona make millions of bars. His makes as many as the season's almonds allow. If one year there are few, there is less turrón, and that is that.

How it is made

  1. A worker roasts marcona almonds until they release their oil

    01

The Marcona almonds are roasted until they release their oil.

  2. Enric Garrigós grinds almonds with honey and sugar in the stone boixeta mill

    02

They are ground with the honey and sugar in the boixeta, the workshop's stone mill.

  3. The turrón paste being beaten hot for hours

    03

The paste is beaten warm for several hours until it turns soft.

  4. Enric Garrigós fills wooden moulds with turrón paste

    04

It rests in moulds for a few days before being cut into bars.

What we are allowed to say

Jijona of the Suprema grade has at least 64% almonds. Its fat is the almonds' own, which is why it is soft and oily.

What they do so it lasts

  1. 01The almonds are Marcona from Alicante and Albacete.
  2. 02No palm oil and no added fats.
  3. 03The boixeta has been the same one since 1946 and is repaired rather than replaced.
