Who makes it

Sa Vinyeta Vella is a farm in Es Migjorn Gran with sixty cows, dry-stone walls and a dairy from 1962. Joana Pons started helping her mother there at twelve. She is forty-two now and makes the cheese herself.

Her parents retired in 2024 and her brother lives in Barcelona. On her own she could not manage the milking, the cheese and the paperwork. That winter the farm joined @seis and Joana stayed on to run the dairy.

Joana Pons's hands press the cloth around the fresh curd

She says Mahón is made with your hands, squeezing the cloth. That is why every cheese has a slightly different face. If she stops, Es Migjorn has one dairy fewer. There are only three left.

How it is made

  1. Raw milk pouring straight into the vat in the dairy

    01

The cows are milked twice a day and the raw milk goes straight into the vat.

  2. Joana Pons and a helper press the curd in cloths to give it a square shape

    02

The curd goes into a cloth and is pressed by hand: hence the square shape and the mark of the knot.

  3. Square Mahón cheeses curing on wooden shelves in the cellar

    03

It is salted in brine and aged in the cellar for more than five months.

  4. Joana Pons rubs oil and paprika into a cheese rind

    04

While it ages, the rind is rubbed with oil and paprika, which gives it its colour.

What we are allowed to say

Mature cheese is high in calcium. Calcium is needed for the maintenance of normal bones.

What they do so it lasts

  1. 01The cows graze the farm's walled fields almost all year.
  2. 02The dry-stone walls are mended by hand and keep moisture in the soil.
  3. 03A neighbour takes the whey for his pigs.
