Rain-fed pistachio grove (Kerman variety with Peters pollinator) in La Mancha, a drought-hardy woody crop mechanically harvested in September.
It spans 38 hectares of a crop that is young in Spain but full of promise, and that suits the dry continental climate of La Mancha like few others.
History

The pistachio found its ideal home in the dry, continental climate of La Mancha. The family turned to it when the vineyard stopped paying, and today the pistachio grove is the pride of the house.
The first hectares were planted more than a decade ago and are now in full production; new parcels were added as the crop proved its worth.
The harvest is hulled and dried the same day to protect quality, and much of it is shared in kind among those who take part in the farm.
How we run the farm

Rain-fed with traditional tillage and open-vase training so the shaker works cleanly.
Special care goes into the balance between producing trees and pollinators, and alternate bearing (heavy and light crop years) is managed to keep production steady.
